Our Journey

Some restaurants begin with a business plan. AAYAM began with a dream shared between two people.

Food has always been more than just something to eat for me. Long before I became a chef, I was selective about food. I admired people who cooked with passion, care, and a true understanding of flavour. Over time, that curiosity grew into a passion that shaped my life.

I moved to Europe in 2009 and began my journey in hospitality from the very beginning as a dishwasher. I never attended culinary school, but I never stopped learning. Every kitchen became my classroom, and every experienced chef became a teacher. I was fascinated not only by recipes but also by the science behind food, cooking techniques, ingredients, and the small details that turn a simple meal into a memorable experience.

Outside the kitchen, I continued learning through books, documentaries, culinary shows, and by following talented chefs from around the world. Even today, I still consider myself a student. There is always something new to discover, improve, and create.

One of the greatest inspirations in my journey has always been our guests. I enjoy talking to people, understanding their preferences, and learning what makes a dining experience truly memorable. Every conversation teaches me something new.

While I was developing my passion in the kitchen, Anita was building her own career in hospitality and guest service. Together, we shared the same dream.

After long working days, we would spend hours discussing our future restaurant. We imagined menus before they existed, explored new ideas, searched for inspiration, and dreamed about creating a place that reflected who we are. Long before AAYAM had a location, it already existed in our conversations.

When we finally found the space that would become AAYAM, it looked nothing like it does today. We started from scratch, cleaning, repairing, organising, and building it ourselves, one step at a time. It was hard work, but those days remain some of our happiest memories. After hours of work, we would cook a simple meal, sit together in the unfinished restaurant, and imagine the day we would welcome our first guests.

The reason behind AAYAM goes beyond opening another restaurant.

Luxembourg is home to many South Asian restaurants, but we felt that authentic Nepalese cuisine deserved a stronger identity and a place where it could proudly stand on its own. We wanted to introduce our guests to the richness of Nepalese flavours while embracing creativity and influences from across Asia.

In Nepali, AAYAM means dimension or perspective. That name became the foundation of everything we believe in.

For us, dining is about much more than food. It is about discovering something new. A new flavour. A new culture. A new perspective. A new memory.

Every guest who walks through our doors is invited to experience a new AAYAM through food.

Not simply a meal, but a journey where tradition meets creativity, cultures connect, and every plate tells a story.

This journey is still only beginning. We continue to learn, to experiment, and to grow every single day.
